Award-winning Yorkshire producers collaborate on delicious new chutney

Two of Yorkshire’s best loved food producers have collaborated to produce a delicious new chutney.

Award winning companies Rosebud Preserves and The Wensleydale Creamery have combined their love of simple, local ingredients, traditional recipes and time-honoured techniques to create the delicious new Yorkshire Wensleydale Chutney.

A classic combination of fresh Bramley apples, plump sultanas and traditional spices, the chutney has been specifically created to be the perfect accompaniment to Yorkshire Wensleydale Cheese.

Rosebud CollaborationFounded by Elspeth Biltoft on the principles of sourcing locally and using traditional recipes and techniques, Rosebud Preserves have been making its jams, marmalades, chutneys and jellies at Masham in North Yorkshire since 1989 and now export across the world.

Elspeth, says: “We wanted to work with a local cheese-maker to develop a new chutney and The Wensleydale Creamery seemed the perfect choice as like us it handcrafts its products with passion and skill using locally sourced ingredients.

“When developing the chutney we decided to use apples as the predominant ingredient because in Yorkshire, Wensleydale cheese is traditionally served with oat or fruit cake or eaten with apple pie, which is where the saying ‘an apple pie without the cheese is like a kiss without a squeeze’.

“We found that the simplicity of fresh Bramley apples, vine fruit and traditional spices was the perfect partner for the creamy and crumbly Yorkshire Wensleydale cheese.”

Sandra Bell, marketing manager at The Wensleydale Creamery, said: “Crucial to the cheeses flavour is the Wensleydale milk, drawn from cows which graze in this part of the Dales. The grasses, flowers and wild herbs they eat flavour the milk and along with the Creamery’s own unique cheese-making starter cultures, and the skills of our experienced cheese-makers, this gives our cheese its unique taste.

“We thoroughly enjoyed working with Rosebud Preserves to create the Yorkshire Wensleydale Chutney and the care and attention to detail with the recipe and ingredients was so important to ensure that they arrived at a chutney that perfectly complemented each other.”
