Ingredients
200g Annabel’s Deliciously British strawberries (sliced)
100g crème fraîche
100g feta cheese
3 sprigs of thyme (leaves picked)
1/2 clove garlic (crushed)
1/2 lemon (zested)
1 sheet ready rolled puff pastry
Salt, pepper, chilli flakes
Method
- Heat the oven to 200C (180C fan) and put a baking sheet in to warm up.
- Crumble the feta into a bowl then add the crème fraîche, thyme, garlic and lemon zest. Season with salt, pepper and a pinch of chilli flakes and mash together with a fork until quite smooth.
- Lay the pastry sheet onto a piece of baking parchment and score a border around it, 1cm from the edge. Spread the crème fraîche mixture onto the pastry, smoothing over up to the border edges.
- Scatter the strawberry slices over the tart until well-covered. Bake for 25 minutes until golden brown and puffed up.
- Scatter over more thyme leaves and serve!
