200g Annabel’s Deliciously British strawberries (sliced)

100g crème fraîche

100g feta cheese

3 sprigs of thyme (leaves picked)

1/2 clove garlic (crushed)

1/2 lemon (zested)

1 sheet ready rolled puff pastry

Salt, pepper, chilli flakes

  1. Heat the oven to 200C (180C fan) and put a baking sheet in to warm up.
  2. Crumble the feta into a bowl then add the crème fraîche, thyme, garlic and lemon zest. Season with salt, pepper and a pinch of chilli flakes and mash together with a fork until quite smooth.
  3. Lay the pastry sheet onto a piece of baking parchment and score a border around it, 1cm from the edge. Spread the crème fraîche mixture onto the pastry, smoothing over up to the border edges.
  4. Scatter the strawberry slices over the tart until well-covered. Bake for 25 minutes until golden brown and puffed up.
  5. Scatter over more thyme leaves and serve!
