Baked Pears with Mrs Bell’s Blue & Honey

Ingredients

3 ripe (but not too soft) pears

30g runny local honey plus extra to serve

4 sprigs thyme

100g Mrs Bell’s Blue Cheese

Handful of roughly chopped walnuts, to garnish

Salt and freshly ground black pepper to taste

Method

  1. Preheat the oven to 200 °C or 390 °F.
  2. Cut the pears in half and scoop out the seeds with a teaspoon. Place the halves cut side up on a baking tray and drizzle with honey.
  3. Place the thyme on top of each and bake for 10 minutes or until the flesh is soft when pierced with a fork.
  4. Place a teaspoon of the Mrs Bell’s Blue into each of the pears. Garnish with the chopped walnuts and drizzle with more honey if desired. Season with salt and freshly ground black pepper to taste.
  5. Return to the oven for a couple of minutes until the cheese is slightly melted.
  6. Drizzle over a little more honey and serve immediately. Enjoy!
Top tip: You can serve these both warm and cold, but if you don’t want your cheese to melt, wait until the pears have cooled down completely before stuffing them with the blue cheese.
