Ingredients
1 x pack HECK! Chorizo-Style 97 Sausages
1 x Salad Tomato, diced
1 Red Pepper, diced
1 Green Pepper, diced
300g Long Grain Rice
2 tsp Smoked Paprika
1 x Large Onion, diced
400ml Chicken Broth
100g Sweetcorn
2 tbsp of oil
Handful of Flat Leaf Parsley Leaves, Chopped
Method
- Heat the oil in a pan over a medium heat
- Fry off the onion and peppers until they soft and turning golden
- Increase the heat and add the sausages into the pan. Fry off, until cooked
- Add the rice, stock, paprika and season well. Bring to the boil then stir. Cover for 20 minutes until rice is tender and the liquid has absorbed.
- Add the tomato and sweetcorn to the pan and stir through
- Season to taste and remove from the heat
- Garnish with parsley leaves and serve immediately
