Chorizo Sausage Mexican Rice

Spice up your weekend with this simple to make, one-pan Chorizo Sausage Mexican Rice from the team at Bedale based HECK. Ingredients

1 x pack HECK! Chorizo-Style 97 Sausages

1 x Salad Tomato, diced

1 Red Pepper, diced

1 Green Pepper, diced

300g Long Grain Rice

2 tsp Smoked Paprika

1 x Large Onion, diced

400ml Chicken Broth

100g Sweetcorn

2 tbsp of oil

Handful of Flat Leaf Parsley Leaves, Chopped

 

Method

  1. Heat the oil in a pan over a medium heat
  2. Fry off the onion and peppers until they soft and turning golden
  3. Increase the heat and add the sausages into the pan. Fry off, until cooked
  4. Add the rice, stock, paprika and season well. Bring to the boil then stir. Cover for 20 minutes until rice is tender and the liquid has absorbed.
  5. Add the tomato and sweetcorn to the pan and stir through
  6. Season to taste and remove from the heat
  7. Garnish with parsley leaves and serve immediately
