Easy Apple Crumble Cake

This delicious Easy Apple Crumble Cake recipe from Ripon based Steenbergs, uses their Apple Pie Spice Mix alongside seasonal fruit to create a simple but tasty pudding, filled with all the flavours of autumn. Ingredients

125g olive oil

125g coconut sugar or light brown sugar

3 medium eggs

200g plain flour or GF flour

1 tsp ground cinnamon

1 tsp Steenbergs Apple Pie Spice Mix

2 tsp baking powder

4 apples, 1 grated plus 3 halved, cored and finely sliced

2 tbsp demerara sugar

To serve, ice cream or custard

Method

  1. Preheat the oven to 180C. Grease a cake tin and line with greaseproof paper, set aside.
  2. Mix the olive oil and sugar in a bowl and then add the eggs, one at a time.
  3. Stir in the flour, apple pie spice mix, cinnamon powder and baking powder and mix until just combined.
  4. Add in your grated apple and scrape the batter into the prepared. Smooth the top using a spatula to create an even layer. Nestle the cored and sliced apple halves into the batter and press them in so they are half submerged.
  5. Sprinkle the cake with demerara sugar and bake in the oven for 50-55 minutes or until golden brown. Allow to cool completely in the tin, then slice up and serve with ice cream or custard. Enjoy!
