Ingredients
125g olive oil
125g coconut sugar or light brown sugar
3 medium eggs
200g plain flour or GF flour
1 tsp ground cinnamon
1 tsp Steenbergs Apple Pie Spice Mix
2 tsp baking powder
4 apples, 1 grated plus 3 halved, cored and finely sliced
2 tbsp demerara sugar
To serve, ice cream or custard
Method
- Preheat the oven to 180C. Grease a cake tin and line with greaseproof paper, set aside.
- Mix the olive oil and sugar in a bowl and then add the eggs, one at a time.
- Stir in the flour, apple pie spice mix, cinnamon powder and baking powder and mix until just combined.
- Add in your grated apple and scrape the batter into the prepared. Smooth the top using a spatula to create an even layer. Nestle the cored and sliced apple halves into the batter and press them in so they are half submerged.
- Sprinkle the cake with demerara sugar and bake in the oven for 50-55 minutes or until golden brown. Allow to cool completely in the tin, then slice up and serve with ice cream or custard. Enjoy!
