RECIPE TITLE: Golden mincemeat INTRO SENTENCE: This recipe is perfect for guests who don't like dark dried fruit such as raisins or currants. It makes enough for 2 large (900g) jars. METHOD: 1. Mix everything together, spoon into sterilised jars and top with a little more brandy. 2. Seal tightly with screw-on lids, then store or use in your recipes straight away. TIP: You can sterilise jam jars by placing them in the oven at 140°C for 10 minutes. Wash the lids in soapy water, rinse well, and allow to dry before use. Ingredients

500g ‘yellow’ mixed dried fruit, roughly chopped (this recipe uses 150g soft dried mangoes, 150g dried sour cherries and 200g soft dried apricots; other dried fruits such as peaches are also good if you can find them)
3 dessert apples, peeled, cored and finely diced (about 500g unprepared weight)
150-200g mixed peel
1 tsp Taste the Difference Valencian orange extract
1 tsp Taste the Difference Sicilian lemon extract
¾ tsp ground cloves
¾ tsp ground nutmeg by Sainsbury’s
¾ tsp Fairtrade ground cinnamon by Sainsbury’s
150g Sainsbury’s Fairtrade light brown soft sugar
125ml brandy or rum, plus more to top up
