Kheer Traditional Indian Rice Pudding

A delicious Indian twist on a British teatime classic, Kheer is a traditional dish in India and often served at mosques and temples.  This version, curtesy of family run Rafi’s Spice Box, is temptingly rich and served with either fresh or dried fruit to balance the sweetness. Ingredients

25g butter

2-inch cinnamon

175g light brown sugar

115g long grain rice

2 pints whole milk

1 tsp ground cardamom

50g sultanas

25g Flaked almonds

1/2 tsp freshly grated nutmeg

 

Method

  1. Add the rice, milk, cinnamon, sugar and cardamom to a saucepan and heat gently.
  2. Stir on a low heat for 20 minutes or until the rice is nearly cooked.
  3. Add the sultanas and almonds and keep stirring to prevent the rice from sticking.
  4. When the mixture has thickened, serve either warm or cold with a final dusting of nutmeg and some dried or fresh fruit.
