Autumn is officially here, and so with it returns the warming one pot dinner, full of comforting flavours to stave off the chill. This quick and easy recipe from the team at Gordon Rhodes uses their Posh Sausage Cassoulet Mix combined with thick pork sausages and chorizo to create a simple supper that’s a real crowd pleaser and perfect for a mid-week meal. Ingredients

8 Thick pork sausages

200g Cooking chorizo (optional)

2 Diced peppers

1 Red onion sliced thinly

1 tin of Haricot Beans

1 tin of chopped tomatoes

200ml water

GR Posh Sausage Cassoulet Mix

 

Method

  1. Brown the sausages in a pan to seal in the flavour then add them along with the peppers, red onion and drained haricot beans to the slow cooker pot.
  2. Blend the sauce sachet with the water and add in along with the tinned tomatoes. Stir thoroughly.
  3. Cover and cook for 4 hours on high or 8 hours on medium or until the meat is tender and cooked through (keep covered during cooking. Cooking times may vary between slow cooker models).
  4. Remove the lid and let it stand for 5 minutes before serving.
  5. Top Tip: for an extra dash of decadence, replace the half of the water with red wine, reserving the rest of bottle to enjoy alongside it one cooked!
