Ingredients
Boneless pork loin
Barbeque sauce (we like Stokes!)
1 red cabbage, shredded
1 white cabbage, shredded
2 carrots, grated
1 red onion, diced
4 tbsp mayonnaise
A handful of fresh thyme
Black pepper to season

Method
- Place the pork loin in your slow cooker and add just enough water to cover the bottom of the cooker. Cook on low for 6-7 hours then shred the pork with 2 forks.
- Stir in the barbeque sauce and continue to cook on low for another hour.
- Cook the Bannisters Baked Jacket Potatoes as per instructions.
- While the potatoes are cooking, add the red cabbage, white cabbage, carrots and onion to a mixing bowl and stir in the mayonnaise and a shake of black pepper to season.
- Load your cooked potatoes with the pulled pork ‘n’ slaw, a drizzle of extra barbeque sauce and serve with a sprinkle of fresh thyme.
