Ingredients

Boneless pork loin

Barbeque sauce (we like Stokes!)

1 red cabbage, shredded

1 white cabbage, shredded

2 carrots, grated

1 red onion, diced

4 tbsp mayonnaise

A handful of fresh thyme

Black pepper to season

Method

  1. Place the pork loin in your slow cooker and add just enough water to cover the bottom of the cooker. Cook on low for 6-7 hours then shred the pork with 2 forks.
  2. Stir in the barbeque sauce and continue to cook on low for another hour.
  3. Cook the Bannisters Baked Jacket Potatoes as per instructions.
  4. While the potatoes are cooking, add the red cabbage, white cabbage, carrots and onion to a mixing bowl and stir in the mayonnaise and a shake of black pepper to season.
  5. Load your cooked potatoes with the pulled pork ‘n’ slaw, a drizzle of extra barbeque sauce and serve with a sprinkle of fresh thyme.
