Tomato & Avocado Breakfast – perfect for a lazy Sunday Brunch

Ingredients

4 thick slices (2 each) of seeded, wholemeal bread

2 medium or 4 small fairly ripe tomatoes.

4 slices of good quality Yorkshire back bacon.

1 ripe avocado.

Mature Cheddar cheese, sliced into thin shards.

Method

  1. Toast the slices of bread on both sides, then butter the top side.
  2. Grill the bacon gently under a slow medium grill without burning. Share out onto the buttered, toasted slices of bread.
  3. Slice the avocado into about half a centimeter slices, and distribute evenly on to the bacon.
  4. Gently tear or slice the tomatoes and share out on the toast.
  5. Cut the cheese with a peeler into thin shards and scatter on the top of the avocado and tomatoes.
  6. Place under a slow, medium grill until the cheese melts. (This won’t take longer than 2 minutes, so keep watching it).
Serve two slices per person and enjoy! N.B As an alternative to the bacon, why not add a slice of smoked salmon.
