Anna’s Happy Trotters Pulled Ham

Using everything but the oink from their fantastic free range pigs, the East Yorkshire based Longthorp family’s award-winning products, sold under the Anna’s Happy Trotters brand really are the "la creme de la creme" of the porcine world! As well as welfare being high on their list of priorities, so too is the ethos of using every part of their pigs to create delicious dishes throughout the year.  This simple pulled ham recipe using the less popular shoulder cut, is cooked low and slow to create a mouth-watering dish with the same texture as pulled pork.  Perfect for a weekend treat.  

Ingredients

3-4kg Shoulder of ham joint

3 Tablespoons of Sweet Chilli sauce

3tbsp demerara sugar

Method

  1. Place the ham in a roasting tin and roast in the oven for 5-8 hours at 130 degrees
  2. Remove the skin from the ham leaving as much fat as possible. Score the fat in a criss-cross style
  3. Spread the sweet chilli sauce all over the ham then sprinkle over the sugar
  4. Roast for a further 20 minutes at 180 degrees
  5. Remove the ham from the oven and leave the ham to rest for 20 minutes
  6. Pull apart the cooled ham with a fork creating shreds of the tender meat
  7. Serve with homemade coleslaw and sweet potato fries
