300g self-raising flour
1 tsp bicarbonate of soda
2 eating apples
1 tsp ground cinnamon
- Add the flour, bicarbonate of soda, eggs, cinnamon and milk into a bowl and whisk into a smooth batter. Once done, add the grated apple and mix well.
- Melt a small knob of butter or sunflower oil in a frying pan (Butter will give a deeper golden finish but it does burn on a high heat so keep an eye on it) and add a ladle of batter.
- After a couple of minutes the top will start to bubble which means the bottom side is cooked. Flip over and cooked the underside for a couple of minutes.
- Serve warm with a drizzle of maple syrup.
