Ingredients
150g Mrs Bell’s Salad Cheese
Olive oil, for drizzling
80ml runny honey
3-4 figs, quartered
2 tablespoons pistachios, chopped
2 thyme sprigs, plus extra to garnish
Accompaniments:
Stag Water biscuits
Cranberry and raisin toast crackers
Mini cucumbers, halved lengthways
50g mixed olives
Method
- Heat the oven to 200C/180C fan/gas 6.
- Place the Mrs Bell’s Salad Cheese in a small ovenproof dish that will fit on your board.
- Drizzle with olive oil and bake for 6 mins or until the cheese is springy to the touch but not melted.
- Remove from the oven and drizzle with the honey. Arrange the figs around the cheese, sprinkle over the chopped pistachios and bake everything for a further 10 mins.
- Remove and season to taste with black pepper and garnish with the thyme sprigs.
- To assemble, put the dish in the centre of a wooden board and arrange the crackers, toasts and cucumbers around, it along with the olives. Garnish with the remaining thyme sprigs and enjoy!
