Baked Mrs Bell’s Salad Cheese Sharing Platter

Ingredients

150g Mrs Bell’s Salad Cheese

Olive oil, for drizzling

80ml runny honey

3-4 figs, quartered

2 tablespoons pistachios, chopped

2 thyme sprigs, plus extra to garnish

Accompaniments:

Stag Water biscuits

Cranberry and raisin toast crackers

Mini cucumbers, halved lengthways

50g mixed olives

 

Method

  1. Heat the oven to 200C/180C fan/gas 6.
  2. Place the Mrs Bell’s Salad Cheese in a small ovenproof dish that will fit on your board.
  3. Drizzle with olive oil and bake for 6 mins or until the cheese is springy to the touch but not melted.
  4. Remove from the oven and drizzle with the honey. Arrange the figs around the cheese, sprinkle over the chopped pistachios and bake everything for a further 10 mins.
  5. Remove and season to taste with black pepper and garnish with the thyme sprigs.
  6. To assemble, put the dish in the centre of a wooden board and arrange the crackers, toasts and cucumbers around, it along with the olives. Garnish with the remaining thyme sprigs and enjoy!
