Ingredients
1 pack HECK! Pumpkin Spice Sausages, sliced into 2–3cm pieces
1 tbsp olive oil or butter
1 onion, chopped
2 garlic cloves, crushed
500g pumpkin, peeled & chopped
250g broccoli florets
750ml vegetable stock
200ml single cream
Salt & black pepper, to taste
Pinch of nutmeg (optional)
Method
- Heat the oil in a large pan and gently fry the sausages, onion and garlic until the sausages are golden and the onions are soft.
- Stir in the chopped pumpkin and then pour over the stock. Simmer for 15 minutes.
- Add the broccoli and cook for a further 8–10 minutes until tender.
- Stir in the cream and season to taste with salt, pepper and nutmeg.
- Ladle the hot soup into bowls (or a hollowed pumpkin for extra wow) and serve with crusty bread. Enjoy!
