Creamy Broccoli & Pumpkin Soup

Ingredients

1 pack HECK! Pumpkin Spice Sausages, sliced into 2–3cm pieces

1 tbsp olive oil or butter

1 onion, chopped

2 garlic cloves, crushed

500g pumpkin, peeled & chopped

250g broccoli florets

750ml vegetable stock

200ml single cream

Salt & black pepper, to taste

Pinch of nutmeg (optional)

Method

  1. Heat the oil in a large pan and gently fry the sausages, onion and garlic until the sausages are golden and the onions are soft.
  2. Stir in the chopped pumpkin and then pour over the stock. Simmer for 15 minutes.
  3. Add the broccoli and cook for a further 8–10 minutes until tender.
  4. Stir in the cream and season to taste with salt, pepper and nutmeg.
  5. Ladle the hot soup into bowls (or a hollowed pumpkin for extra wow) and serve with crusty bread. Enjoy!
