Pulled Pork Quesadillas with Goats Cheese

Ingredients

1kg Boneless pork shoulder joint

BBQ Style Pulled Pork Gourmet Sauce Mix

2 Red Pepper, sliced

2 Yellow pepper, sliced

2 Jalapeno, sliced

8 x Flour tortillas

300g Goats cheese

Method

  1. Place the pork joint and peppers in your slow cooker pot.
  2. Blend the Pulled Pork Sauce Mix with the water and pour over the pork and peppers.
  3. Cover and cook for 4 hours on HIGH or 8 hours on LOW or until the meat is tender and cooked through (keep covered during cooking, cooking times may vary between slow cooker models).
  4. Once the meat is ready, use 2 forks to shred the pork, then mix back into the sauce.
  5. Preheat oven to 75C/Gas Mark 6.
  6. Sprinkle a thin layer of cheese and jalapenos over the surface of each tortilla.
  7. Spoon the pulled pork mixture over the cheese and jalapenos, then fold the tortillas in half.
  8. Cook each tortilla individually in a griddle pan, turning once, for about 6 minutes.
  9. Transfer to a baking sheet to keep warm in the oven until ready to eat. Enjoy!
