Ingredients
1kg Boneless pork shoulder joint
BBQ Style Pulled Pork Gourmet Sauce Mix
2 Red Pepper, sliced
2 Yellow pepper, sliced
2 Jalapeno, sliced
8 x Flour tortillas
300g Goats cheese
Method
- Place the pork joint and peppers in your slow cooker pot.
- Blend the Pulled Pork Sauce Mix with the water and pour over the pork and peppers.
- Cover and cook for 4 hours on HIGH or 8 hours on LOW or until the meat is tender and cooked through (keep covered during cooking, cooking times may vary between slow cooker models).
- Once the meat is ready, use 2 forks to shred the pork, then mix back into the sauce.
- Preheat oven to 75C/Gas Mark 6.
- Sprinkle a thin layer of cheese and jalapenos over the surface of each tortilla.
- Spoon the pulled pork mixture over the cheese and jalapenos, then fold the tortillas in half.
- Cook each tortilla individually in a griddle pan, turning once, for about 6 minutes.
- Transfer to a baking sheet to keep warm in the oven until ready to eat. Enjoy!
