Rhubarb Bellini

Get you Valentine’s Day off to a deliciously fizzy start with this Rhubarb Bellini cocktail recipe form the team at Ripon based The Little Red Berry Co.  Using Yorkshire forced rhubarb combined with their popular Rhubarb and Vanilla Vodka, this local twist on a classic cocktail is sure to go down a storm.


25 ml Rhubarb and Vanilla Vodka

50 ml Rhubarb Puree

Champagne or Prosecco to finish



  1. To make fresh rhubarb puree, soften one chopped stick of rhubarb in a small drop of water with a tablespoon of sugar and simmer until soft.
  2. Blend into a puree with a hand blender.
  3. Mix the puree and with the vodka
  4. Top with champagne or prosecco to taste – enjoy!
