Saint John’s Yorkshire Pasta Pudding

In Ibiza this dessert is synonymous with the mid-summer celebration of Sant Joan at the end of June. A quirky pasta version of a rice pudding, this simple but delicious dish pairs pasta from the award-winning Yorkshire Pasta Company with cream, cinnamon and dark chocolate to create a truly unique dessert. 100g Tortiglioni Yorkshire Pasta

2 cups of single cream

1 tsp cinnamon powder

zest of 1/2 lemon

150g caster sugar

100g Yorkshire Pasta

Dark chocolate



  1. Gently warm the cream in a saucepan over a medium to low heat
  2. Add the cinnamon, lemon zest and sugar and simmer
  3. Meanwhile cook pasta in salted water for only 2-3 mins (still raw inside)
  4. Drain the pasta then add to the simmering cream mix
  5. Cook for 6-8 mins until the pasta is al dente
