Sicilian Tuna with capers, San Monzano tomatoes and dried oregano

Ingredients

400g of Yorkshire Pasta conchiglie

2 heaped table spoons of Capers

400g cherry tomatoes

A bunch of dried oregano (if you can’t find the bunch get the pot of dried oregano in your local supermarket)

A tin of Tuna in sunflower oil

Method

  1. Cook your Yorkshire Pasta per packet instructions
 
  1. Heat a wide based pan with a tablespoon of olive and add your capers. Cook until crispy and set aside for later
 
  1. Into the pan we go with our cherry tomatoes, oregano and tuna. Cook this in the reserved olive oil until fragrant (5-6 minutes)
 
  1. Once cooked drain your Yorkshire Pasta reserving a cup full of pasta water and transfer to the pan
 
  1. Add your pasta water to the pan, season well with salt and pepper and remaining oregano
