BBQ season is in fully swing so why not give this simple but delicious BBQ Chicken recipe from award-winning Soanes Poultry a try. Ingredients

Soanes drumsticks and thighs

4 tbsp cider vinegar

3 tbsp coarse grain mustard

3 cloves garlic, crushed

1 lime, juiced

1/2 lemon, juiced

110g soft dark brown sugar

1/2 tsp salt

ground black pepper to taste

 

Method

  1. Mix the cider vinegar, mustard, lime and lemon juice, sugar, salt and pepper in a bowl, then whisk in the oil.
  2. Place chicken in the mixture, cover and marinate for 8 hours, or ideally overnight.
  3. Preheat the BBQ and place chicken on a lightly oiled grate. Cook for 6 - 8 minutes per side, until juices run clear. (Check this by inserting a thermometer into the thickest part of the meat - when the temperature reaches 165F or 75C, it is cooked.)
  4. Serve with crusty bread and salad and a cold beer in the garden!
