Strawberry Crumble Breakfast Bars

Ingredients

300g strawberries (roughly chopped)
2 medium apples (peeled, cored and chopped into small chunks)
150g plain flour

200g porridge oats
70g caster sugar (plus 2 tbsp extra for topping)
1 tsp cinnamon
1 tsp ground ginger
1 tsp mixed spice

130g Longley Farm butter (cubed)

Method

  1. Tip the strawberries and apples into a saucepan along with 1 tbsp of caster sugar. Stir together and set over a medium heat for 15-20 minutes until the fruit is soft and jammy. Set aside to cool.
  2. Grease and line a 20cm baking tin. Preheat the oven to 170°C fan.
  3. Tip the flour, spices, butter, oats, and sugar into a bowl, and using clean hands rub together so you get a crumble topping consistency.
  4. Put half of the crumble mix into the bottom of the baking tray, flattening out with your hand or the back of the spoon. Spread over the fruit mixture, then top with the remaining crumble mix. Sprinkle over a little more sugar, then bake for 50 minutes until golden.
  5. Remove from oven and allow to fully cool in the tin before slicing into bars. Enjoy!
