‘Tis (still) the Stilton to be Jolly

Lots of stilton left from your Christmas Cheeseboard?  Put it to delicious use with this delicious, fridge cleaning recipe from the team at East Yorkshire based Bannisters Yorkshire Family Farm. Warm and comforting and perfect for staving off the January Chill, this recipe pairs their Baked Jacket Potato with left over cheese, parma ham and diced apple and makes a quick and easy post-Christmas lunch to savour. Ingredients

Leftover stilton (or any other blue cheese) broken into large pieces

1 apple

handful of watercress

Few cherry tomatoes

2 slices Parma ham

Olive oil, balsamic vinegar or your favourite dressing

Bannisters Yorkshire Family Farm Baked Jacket Potato

Method

  1. Cook the Bannisters Baked Potato (only 5 mins) as per instructions.
  2. Assemble a small salad with watercress, thinly sliced apple and chopped cherry tomatoes on the side of a plate.
  3. Pop the Baked Potato on the plate, open up, and top with stilton pieces, torn strips of parma ham and apple.
  4. Drizzle over your favourite dressing. Eat while baked potato is still steaming hot and stilton is only just starting to melt.
