Award-winning local butchers, Lishman’s of Ilkley, is set to take its hot food and delicatessen offering to a new level following the appointment of celebrated Wharfedale chef, Chris Monkman.

Monkman will assume the role of development chef at Lishman’s and will work alongside Gareth Heaton, delicatessen manager, to develop a gastro-pub inspired range of ready-to-cook meals which will be made in-house using Lishman’s finest local meats and produce.

With a career in the restaurant trade that spans more than 30 years, Chris will employ his extensive knowledge and expertise to produce take-home meals that will complement the globally-inspired delicatessen items that Gareth has developed over the last eight months. Wholesome and hearty dishes such as beef and oyster pie and Yorkshire’s best Lancashire hot pot, are just some of the dishes Chris will be developing.

Speaking about his new role, Chris said: “David Lishman and I have know one another for many years and I have always admired his meat-sourcing philosophy and his entrepreneurial approach to showcasing these top quality cuts in the shop.

“My aim is to champion what David and his team already do by creating hot meals, inspired by my restaurateur years, which brim with Lishman’s fresh and welfare friendly cuts of meat.

“I’m very much looking forward to teaming up with Gareth too who has successfully grown Lishman’s delicatessen counter since its launch in March to now offer favourites such as hot honey glazed sandwiches and Harrogate meat loaf terrine. Between us, with the expert support of David and his team of butchers, we hope to build on this already strong platform to offer customers a first class home dining experience.”

As well as Chris’ new range of hot dishes, Lishman’s continues to perfect its famous and medal-worthy selection of fresh meats, champion sausages and homemade pies. Customers can pep-up their weekly butcher’s trip with a range of continental deli items, freshly-made sandwiches & coffees and fine wines & beers, all independently sourced and selected by David and his team.
