Lishman’s Unveil New Look Shop 

An award-winning family run butchers have opened the doors to their newly refurbished and modernised shop.

Lishman’s of Ilkley Butchers & Charcutiers unveiled the results of the project last week which saw a major investment and transformation of the popular shop’s layout and branding.

Owner David Lishman said: “The new refurbishments have enabled us to further showcase the traditional craftsmanship and skills of our butchers as well as the quality of our products.

“The new layout has created significantly more space for customers, making it easier to browse and we’ve also added in a fast-track pie hatch with direct access for customers from the street which will reduce the queues during busy periods for our award-winning pork pies.”

Other new features include a standalone charcuterie display section and a butchers’ display window featuring a Himalayan Salt Wall which contains bricks that create the perfect environment for dry-ageing beef and maximising its flavour.

Founded over 35 years ago, the business has since tripled in size with the expansion into neighbouring premises on either side of the original shop and David’s daughter Emma joining the business in 2015.

As well as the new layout, the team have also taken the opportunity to give their branding a new look which is displayed across the shop frontage as well as inside and on the products themselves.

Emma Lishman said: “The new layout provides a shop window for customers to enjoy, allowing them to browse the different sections, see our butchers at work and ask questions too.

“Overall our aim was to modernise our shop and bring it up to date, but we also really wanted to be able to share and highlight where our meat comes from and how its produced.  We always source the highest quality and highest welfare beef, lamb and pork from local farmers to ensure the provenance of our products and to reduce food miles and the shop, along with the new signage have enabled us to communicate that more effectively to our customers.”

The new look premises come after a busy and successful couple of years for the award-winning butchers who were named Supreme Champions in the Q Guild of Butchers Smithfield ‘Star’ Awards 18 months ago.  The team have also been busy developing their standalone drying and maturation unit which opened in 2021 in Skipton as part of their growing charcuterie arm, supplying Lishman’s cured hams and salamis to independent retailers, delicatessens, and restaurants nationwide.
