Proper Yorkshire butter with real Yorkshire provenance.

The team at a West Yorkshire Cheesemongers have teamed up with an award-winning dairy farmer in the heart of the Yorkshire Dales to produce a new artisan butter, Bywater.

Cryer & Stott, based at Pontefract, have created the product in partnership with Sam Moorhouse, founder of Hesper Farm Skyr, who milks 180 cows on the family farm near Skipton.  

Managing Director Richard Holmes said: “Over our 24 years in business, we’ve dealt with the region’s top chefs, and time and time again we’ve been asked if we can provide a Yorkshire butter portion.

“We realised there was a gap in the market, so decided to team up with Hesper of Skipton, to source the finest quality milk from their multi award-winning Aireburn herd.  A third-generation farming family, they believe in sustainable farming which fits perfectly with Cryer & Stott’s ethos, so it’s a really exciting collaboration.”

The butter, which was launched this week will come in two formats, a retail roll and a 10g butter cap portion.  Individually hand wrapped, the packaging design represents both firms Yorkshire roots with a herringbone flat cap style.

Richard continues: “We’ve worked hard on the recipe to create what we feel is perfection and it really has been a labour of love.  We were determined to create a proper Yorkshire butter with real provenance, and we hope customers will love it as much as we do.”

Family-owned Cryer and Stott have shops in both Pontefract and Castleford and as well as stocking and supporting a range of artisan cheese producers from throughout Yorkshire and beyond, the team also run a Seasonal Monthly Cheese Club offering subscribers a different selection of cheeses delivered directly to their door each month along with a fully descriptive tasting sheet with information about the cheesemakers, tasting notes, history and locality.
