Lemony King Prawn & Smoked Salmon Salad

Pairing two of the county’s award-winning producers, this Lemony King Prawn & Smoked Salmon Salad uses delicious Smoked Salmon Slices from Staal Smokehouse and Yorkshire Rapeseed Oil’s newly released Lemon & Lavender Gin Dressing, to create a delicious dish and the perfect starter for Christmas lunch.


100g cooked king prawns
100g Staal Smokehouse Smoked Salmon Slices
½ bag of watercress, approximately 40g
¼ cucumber, approximately 10cm long
3 spring onions, ends trimmed and sliced lengthways
2 tbsps of Yorkshire Rapeseed Oil’s Lemon & Lavender Gin Dressing, plus extra for drizzling
Lemon slices to serve


  1. Using a vegetable peeler, peel the cucumber into long ribbons, discarding the watery core.
  2. Next, simply place all the ingredients in a bowl and just before serving add the Lemon & Lavender Gin Dressing and a little salt and black pepper.
  3. Serve immediately with slices of lemon and enjoy
