Oak Roast Salmon & Gin Mousse Sharing Board

Using both Oak Roast Salmon and Gravadlax from East Yorkshire based Staal Smokehouse, this sharing platter brings together a host of award-winning Yorkshire producers to create a fresh and simple dish that would be perfect for entertaining this Spring. Ingredients

170g Staal Oak Roast Salmon
100g ricotta
100g full fat cream cheese
1 single measure (25ml) Whitby Gin
Zest of 1/2 unwaxed lemon
1 tbsp Yorkshire Rapeseed Oil with Lemon Garlic, Oregano & Thyme
100g Staal Gravadlax
A handful of cucumber ribbons
A handful of walnuts
A little fresh dill
1/2 lemon sliced
1 pack Side Oven Bakery Oatcakes

Method

  1. Use a food processer to blitz together the oak roast smoked salmon, ricotta, cream cheese, gin, lemon zest and Lemon, Garlic, Oregano & Thyme Rapeseed Oil until you have a smooth consistency.
  2. Spoon onto a serving board and spread out to create a base layer
  3. Top with the cucumber ribbons, strips of Gravadlax, walnuts, lemons, fresh dill and a further drizzle of the rapeseed oil.
  4. Serve with side Oven Bakery Oatcakes to scoop, dip and load with your toppings!
