Rosebud release new season preserves

Masham based Rosebud Preserves have launched their new season Gooseberry & Elderflower and Rhubarb & Strawberry jams just in time for the summer season.

Using fresh, locally grown and foraged ingredients the team at Rosebud, along with founder Elspeth Biltoft, have spent the last few weeks foraging the North Yorkshire countryside for fresh elderflowers amongst other wild delights.

Elspeth says: “Every year we check local hedges for abundant quantities of the fresh creamy white flowers. They must be picked when the day is warm, dry and sunny.

“It’s more a pleasure than a chore and when we return to the farm we chill the blossoms before making a simple Muscat flavoured liquor with them to add to the gooseberries to make the jam.”

Founded in 1989, Rosebud produce an award-winning range of jams and preserves from their farm in Healey, supplying many farm shops and independent retailers as well as exporting to countries in throughout Europe and the US.

“Gooseberry & Elderflower is perhaps the most special of our jams and has won more awards for us the years, than any other product” continues Elspeth.

“The secret for all our products is quality and simplicity of ingredients.  Sharp Gooseberries, just enough unrefined sugar and generous quantities of freshly picked Elderflowers. The soft natural set retains a sweet and sharp fruity flavour, replete with the heady scent of Muscat. It’s a very simple but delicious recipe.”

The rhubarb to make Rosebud’s Rhubarb & Strawberry Jam is again locally grown and sourced from David Westwood & Son, sixth generation rhubarb growers based in the Yorkshire Rhubarb Triangle near Wakefield and paired with fresh local strawberries for sweetness.
